Fried Beetroot, Quinoa & Yellow Lentils - Easy Vegan Protein

💧250 ml water (1 cup)
🥄50 g split yellow mung lentils (¼ cup)
🥄50 g quinoa (¼ cup)
🥄1 small beetroot (about 100 g / 3.5 oz)
🥄peeled and diced
🥄40 g fresh spinach (about 1½ cups loosely packed)
🫒1 tbsp of ghee or olive oil
🌿1 tsp fresh parsley
🥄chopped
🧂1 tsp mineral salt (adjust to taste)
🥄Seasonings
🥄1 tsp ground cumin
🫚1 tsp fresh ginger
🥄minced
🥄1 tsp ground turmeric
🍋1 tsp fresh lemon juice
🥄Additional Liquid
💧125 ml water (½ cup)
🥄1. Rinse the quinoa and yellow mung lentils thoroughly.
🫒3. Heat ghee or olive oil in a pan over medium-low heat.
🥄4. Add the diced beetroot and cook for about 8 minutes.
🥄5. Add spinach and cook until wilted and tender.
🥄6. Stir in cumin

🧂and salt.
🥄8. Combine with the cooked quinoa and lentils.
