- 875g powdered sugar
- 91 tsp vanilla
- 10180g cherries
- 1125g sugar
- 125g for each berry layer
- 135g for cherry glaze
- 144 tbsp for each berry layer gelatin mix
- 154 tbsp for cherry glaze gelatin mix
- 16use flat-bottom mold. curve molds may collapse.
- 17use acetate paper. parchment paper might bleed (my case).
- 18do not overwhip cream.
- 19always simmer vegan gelatin.
- 20warm knife before slicing (in hot water) . wipe knife after every cut (with warm towel)
- 21sieve all purรฉes to avoid lumps.
