- 4Take out the chilled dough, cut out shapes with a cookie cutter, place them on a baking mat, bake, then let cool completely
- 5Make the filling: mix mascarpone with powdered sugar until smooth, add softened unsalted butter and beat until well combined, then add candied lemon peel, mix evenly, and transfer to a piping bag
- 6Pipe the lemon buttercream onto the cookies, spread evenly and press gently to sandwich, then freeze for 15 minutes before serving
