- 1Heat the oven to 350F. Spray a muffin tin (you'll fill 15 cups total) and set it on a baking sheet.
- 2Cook and crumble the sausage in a skillet over medium heat until browned, about 5-6 minutes. Set aside.
- 3Add the eggs, egg whites, cottage cheese, and all the seasonings to a blender. Blend until completely smooth — this is what makes them creamy and custardy instead of lumpy.
- 4Fold in the cooked sausage, cheddar, and chopped spinach by hand.
- 5Fill each muffin cup about 3/4 full.
- 6Place a dish of hot water on the lower oven rack. This water bath keeps the bites soft instead of rubbery.
- 7Bake 22-25 minutes, until the centers are just set.
- 8Rest in the tin 10 minutes, then lift out. Cool completely before storing.
