🍗For the chicken
🍗Chicken breast (skinless) - 1 piece
🥄250 g
🌾Potato starch - 2 tbsp
🧂Salt and pepper - a little
🥄Sake - 2 tsp
🧅Japanese leek (or green onion) - 25 g
🫚Ginger - 3–5 g
🍬Sugar - 1 tbsp
🫗Soy sauce - 2 tbsp
🥄Vinegar - 1 tbsp
🫒Sesame oil - 1 tbsp
🥄Tips / Notes
🌾Coating the chicken with potato starch gives it a smooth and silky texture
🌾Cooking over low heat helps keep the starch coating from coming off
🍗Make sure the chicken is fully cooked through before serving
🫚Using a spoon makes it easier to peel ginger
