- 1감자를 쪄서 준비해주세요
- 2감자는 으깨고 모든재료를 섞어 한덩이가 될 때까지 반죽해주세요
- 3한입크기로 모양을 민들어 주세요
- 4끓는 물에 넣어 뇨끼가 떠오르면 1분정도 더 삶은 후 건져내어 주세요
- 5올리브오일에 버무려 주세요
- 6올리브오일에 슬라이스한 마늘을 볶아주세요
- 7마늘향이 나면 버섯을 넣고 볶아주세요
- 8버섯이 숨이 죽으면 우유와 생크림을 넣고 끓이다가 끓으면 소금, 후추를 넣고 적당한 농도가 되면 트러플제스트를 넣고 마무리해주세요
- 9Peel potatoes and cut out all the dark spots and eyes. Cut them in small pieces and add them to the pot of cold water
- 10Cook potatoes until fork-tender but not overdone to where it’s falling apart
- 11Drain off all the water and transfer potatoes into a bowl
- 12Mash each potato with a hand then add all ingredients
- 13Knead the dough until smooth
- 14Split the dough into pieces then shape them
- 15Bring a pot of water to boil. Drop in it, a few at a time so they don’t stick
- 16Once they float to the top, cook for about 1 more minute and take them out
- 17Place gnocchi in a bowl and stir in olive oil
- 18To make pan-fried gnocchi, heat a skillet
- 19When the skillet is hot enough add oil and gnocchi to the skillet
- 20Fry for about 4 minutes over medium high heat , making sure to flip until gnocchi are browned and crisp on both sides
- 21Heat a large skillet over medium-high heat. Add olive oil and sauté garlic until fragrant
- 22Add sliced mushrooms and sauté until it cooked
- 23Pour in milk and heavy cream and stir to heat through
- 24Reduce heat to medium-low and stir until boiled down
- 25Season with salt and pepper to taste (+ truffle zest)
