No-Bake Mango Cheesecake with Ladyfingers — Looks Like a Bakery Cake (No Oven, No Gelatin!)

🥭2 ripe mangoes (about 2 lbs / 900g total)
🍦1⅓ cups heavy whipping cream 33%+ (320g)
🥄cold
🍦¾ cup powdered sugar (80g) — for cream
🍦10.5 oz cream cheese (300g)
🥄room temperature
🧀¾ cup powdered sugar (80g) — for cheese
🥛½ cup whole milk — for soaking
🥄1 package ladyfinger cookies (savoiardi)

  1. 1Line a springform pan with plastic wrap on the bottom and sides.
  2. 2Slice one mango into long flat strips and arrange tightly on the bottom of the pan — this becomes the top when flipped!
  3. 3Whip cold heavy cream with ¾ cup powdered sugar until thick and creamy.
  4. 4In a separate bowl, mix cream cheese with remaining ¾ cup powdered sugar until smooth.
  5. 5Fold the whipped cream into the cream cheese mixture until fully combined.
  6. 6Spread a layer of cream over the mango in the pan.
  7. 7Quickly dip ladyfinger cookies in milk (1–2 seconds each) and arrange in a single layer over the cream.
  8. 8Dice the second mango into small cubes and spread over the ladyfingers.
  9. 9Add the remaining cream on top and smooth with a spatula.
  10. 10If you have extra mango, add another layer of cubes.
  11. 11Add one final layer of milk-soaked ladyfingers on top.
  12. 12Cover and refrigerate for 5 hours (overnight is even better).
  13. 13Flip onto a serving plate, remove the pan and plastic wrap.
  14. 14Slice and enjoy! 🥭
