๐Coriander leaves 1 bunch
๐งGarlic - 3 cloves
๐ถ๏ธGreen chillies - 3 numbers
๐ถ๏ธNote: Adjust the number of chillies according to the desired spice level
๐ฅFor the pulao
๐ฅMace - 2 pieces ( itโs the dried flower of nutmeg. Its optional )
๐ซGhee / oil - 3 tbsp ( use Ghee for a better flavor)
๐ฅGaram masala powder - 1 tbsp
๐Basmati Rice - 1 cup
๐งWater - 1 cup (same as rice )
๐งSalt as needed

Onion - 1 medium size
๐ฅCubed mixed vegetables - 2 cup
๐ฅI used the following vegetables
๐ฅZucchini - 1
๐ฅCarrot - 1
๐ฅBell pepper big - 1/2
๐ฅPotato medium - 1

- 1Clean the coriander leaves by removing the bottom part of the stem and wash the leaves in a big bowl of water. The dirt will go to the bottom of the bowl and you can fish out the clean leaves from the top.
- 2Take a mixie jar or blender and blend the coriander leaves, garlic cloves and green chillies with a little bit of water. It has to be a paste rather than juice.
- 3Wash the rice 3 times until the water is of clear color and keep it aside.
- 4If you planning to use instant pot, you can start that in saute mode. Otherwise take a pan and place it in the stove with medium heat.
- 5Add ghee to the pan or pot and add mace pieces to it.
- 6Add the onion and fry until itโs translucent and then add the ground paste to this.
- 7Sautรฉ this for couple of minutes to get rid of the raw smell of garlic.
- 8Add the vegetables, salt and garam masala and give it a mix for a minute and turn the stove off.
- 9Once the pulao is cooked and you are able to open after the pressure is gone, add the lemon juice and serve hot.
