- 1Pat the chicken completely dry with paper towels.
- 2Season the cavity generously with coarse salt and peppercorns.
- 3Season the entire outside of the chicken liberally with fine sea salt and black pepper.
- 4Place the chicken in a roasting pan (no rack needed).
- 5Tuck small pieces of cold butter between the breast and legs.
- 6Place the pan into a COMPLETELY COLD, turned-off oven.
- 7Close the door, turn the oven on to 200°C (400°F) using a fan-forced/convection setting.
- 8Roast for approximately 70 minutes (for a 1.5kg chicken) WITHOUT opening the door.
- 9Remove from the oven, transfer the chicken to a rack, cover loosely with foil, and let it rest for at least 20 minutes before carving.
- 10Use the incredible pan drippings to create a delicious natural gravy (jus).
