- 1Cook the pasta first. Cooking times vary by brand, so follow the instructions on the package.
- 2Finely chop the garlic and sauté it in olive oil until fragrant.
- 3Add the peeled and deveined shrimp, then stir in a little butter to make buttery garlic shrimp. It’s delicious even on its own.
- 4Add the anchovies to your taste and mash them into the oil. Pour in one ladle of pasta water to create the sauce.
- 5Add the red pepper flakes and chicken stock to finish the sauce.
- 6Toss in the pasta and emulsify everything well. Cook the pasta to about 80% doneness in the water, then finish cooking it in the sauce so it absorbs more flavor.
- 7Taste and adjust with salt and black pepper if needed.
- 8Turn off the heat, squeeze in the juice of half a lemon, and finish with fresh arugula.
