  1. 1Cook the pasta first. Cooking times vary by brand, so follow the instructions on the package.
  2. 2Finely chop the garlic and sauté it in olive oil until fragrant.
  3. 3Add the peeled and deveined shrimp, then stir in a little butter to make buttery garlic shrimp. It’s delicious even on its own.
  4. 4Add the anchovies to your taste and mash them into the oil. Pour in one ladle of pasta water to create the sauce.
  5. 5Add the red pepper flakes and chicken stock to finish the sauce.
  6. 6Toss in the pasta and emulsify everything well. Cook the pasta to about 80% doneness in the water, then finish cooking it in the sauce so it absorbs more flavor.
  7. 7Taste and adjust with salt and black pepper if needed.
  8. 8Turn off the heat, squeeze in the juice of half a lemon, and finish with fresh arugula.
